Summer Treats

While the weather is still warm, I told myself that I will go on as many picnics as possible. Instead of the typical sandwich I wanted to try something new and easy so I decided to make bruschetta instead.

I like to use roma tomatoes because they are sweeter then the other varieties

I like to use pre-sliced baguette so I can have even slices

Ginger-infused Limeade
I love to infuse limeade/lemonade with refreshing fruits and herbs, I feel its gives that extra "something" to the  same old flavor!!!
     


Recipe:
      1  French baguette
5 Roma Tomatoes 
 Fresh Mozzarella (1 package)
Basil (1 bunch)
Garlic (1 clove)
Sea Salt (to taste)
Crushed Red Pepper (pinch)
Olive Oil

Brush olive oil on bread and toast both sides till golden brown. Cut tomatoes and mozzarella into small cubes, chop fresh basil and garlic finely.  Mix tomatoes, mozzarella, basil, sea salt, garlic, and red crushed pepper together in a bowl and toss. Add bruschetta mixture on top of toasted bread and enjoy!!!
